I have just checked in Transifex, and the Korean translations for 2.1 are now up to 92%. https://www.transifex.com/projects/p/atom/resource/ui-atom-21x/
Feel free to continue working in there, and we will make sure your changes are merged into 2.1.1!

I have brought this to the attention of our lead developer. Here is what he told me:
That's right, I've been going through the list one by one and these are the ones that were not merged:
Korean
Catalan (Valencian)
Greek
Icelandic (Iceland)
Hungarian (Hungary)
Czech
I imported them into 2.1.0 manually.
Btw 2.2.0 was created but the translations should be imported too!
I've filed two tickets: #7451 and #7452.
Jesus, our lead developer, will be managing the manual import in Transifex, so we can get the missing languages up to date. We will be releasing a 2.1.1 release in the near future, and the merged translations will be included in there. It is likely there will be another minor release (2.1.2) shortly after, so if you don't get everything into Transifex in time after Jesus manages the import, don't worry, you will have another chance shortly after to see your work in a public release.
Our apologies for the mix-up, we are still investigating why the Transifex files for these languages did not properly merge into 2.1.
